Event Team Back of House

Growing up, if I could spend time with anyone in the world that I wanted, I spent it with my grandparents.
Going to Grandma’s house was always special, partly because of the food she made. She had a way of making things taste wonderful simply because she made it especially for me! After I became an adult, I realized that I don’t actually like Pero, the imitation “coffee” she would serve me. In fact, it’s kind of gross. But when Grandma made it, she must have used some kind of grandma magic because it always seemed like an amazing treat.
One thing she made that was delicious then and is still delicious was her cereal pudding. A lot of people today probably don’t know what Malt-O-Meal cereal is, but Grandma turned it into a dessert that had the smooth, sweet, creamy consistency of a pudding.
I don’t try pawning off Pero onto my grandkids, but they do ask me to make cereal pudding for them. (They also ask for lemon chips, which are nothing more than regular potato chips drenched with lemon juice and lots of extra salt.) I guess I have found a little “grandma magic” of my own. How many grandmas can make kids want to beg for Malt-O-Meal?
Cereal Pudding
(makes 4 servings)
Ingredients
- 3¼ cup milk (do not use water!)
- ⅔ cup Malt-O-Meal cereal
- ½ tsp salt (optional)
- 1 egg
- 1 tsp vanilla
- honey to taste
Directions
- Bring milk and salt to a boil.
- Stir in Malt-O-Meal gradually. Reduce heat to a low boil and continue stirring constantly for about 1½ minutes.
- Before the cereal thickens, whip the egg and add it in. You have to keep whipping the mixture fast to prevent the egg from curdling and becoming scrambled.
- The mixture should have the consistency of pudding. Add vanilla and honey to taste.
